Marilyn’s Staff Pick
This week, Marilyn is sharing a slice of nostalgia—her mom’s recipe for the best Nanaimo bars. Marilyn jokes that while her mom wasn’t the greatest in the kitchen, this one recipe was her claim to fame. And honestly, she nailed it!
There’s something so special about recipes passed down on handwritten cards, complete with a little wear and tear from years of love.
Ready to try them for yourself? Here’s Marilyn’s mom’s Nanaimo Bar recipe:
Base
Melt over hot water:
½ cup butter
¼ cup sugar
5 tsp cocoa
Stir in:
1 tsp vanilla
1 egg (lightly beaten)
Cool slightly and add:
2 cups finely crushed graham wafers
1 cup fine coconut
½ cup chopped walnuts
Mix well, then press into a 9x9 pan.
Middle Layer
Combine:
2 cups icing sugar
½ cup butter or margarine
2 tbsp Bird's Custard Powder
¼ cup milk
Spread over the base layer.
Top Layer
Chill and cover with:
4 squares chocolate melted with ½ tsp butter.
Cut into squares and enjoy a little taste of Marilyn’s childhood!
